Cucumber, Onion, and Tomato Salad
3 Tomatoes
3 cucumbers
1 onion
1/2 cup apple cider vinegar
1 teaspoon of cracked pepper
2 table spoons of sugar
2 teaspoons of salt
1 cup of water
1/4 cup of olive oil
mix well
Let it chill for 1-2 hours...

Cucumber Jar Salad
Ingredients:
4 thinly sliced cucumbers1-large sliced red onions
1-large sliced green bell peppers
1-tbsp salt
2-cup white vinegar
1 1/2-cups sugar
1-tsp celery flakes
1-tsp red pepper flakes
Directions:
Mix cucumbers, onions, peppers and salt; set a side.Put vinegar, sugar, celery flakes and pepper flakes in a pot and bring to a boil.
Remove from heat and add 2 handfuls of ice until melted.
Place all veggies in large mouth canning jars (2 quarts or 1 half gallon jar)
Pour mixture over cucumbers, store in refrigerator.
Will keep up to 2 months
Makes 2 quart jars

Refrigerator Pickles
Yet another pickle recipe. Can't have too many.

You'll Need:
1 cup white vinegar
1 cup granulated sugar
1 cup water
1-2 teaspoons celery seed (I use 2)
1 teaspoon salt

Grilled Corn, Avocado (or Cucumber) and Tomato Salad with Honey Lime Dressing.
Grilled Corn, Avocado and Tomato Salad with Honey Lime Dressing.
INGREDIENTS:
1 pint grape tomatoes
1 ripe avocado
2 ears of fresh sweet corn
2 tbsp fresh cilantro, chopped
3 tbsp vegetable oil
1 tbsp honey
Sea salt and fresh cracked pepper, to taste
1 clove garlic, minced
Dash of cayenne pepper
Cut the corn off the cob then scrape the cob with the back of your knife to get the juices. Set aside and let cool.
Slice the tomatoes in half.
Dice the avocado (or cucumber) and chop the cilantro.
2. Combine the sliced tomatoes, avocado, cilantro and grilled corn and honey lime dressing and mix gently so everything is evenly coated. Be careful not to mash the avocados.
Let the salad sit for 10-15 minutes to let flavors mingle.

HONEY LIME DRESSING
Juice of 1 lime3 tbsp vegetable oil

Crisp Cucumber Salsa
Note: 1/4 cup is only 16 calories

2 cups finely chopped seeded peeled cucumber
1/2 cup finely chopped seeded tomato
1/4 cup chopped red onion
2 Tbsp minced fresh parsley
1 jalepeno pepper, seeded and chopped
4-1/2 tsp minced fresh cilantro
1 garlic clove, minced or pressed
1/4 c reduced-fat sour cream
1-1/2 tsp lemon juice
1-1/2 tsp lime juice
1/4 tsp ground cumin
1/4 tsp seasoned salt
Tortilla chips
In a small bowl, combine the first seven ingredients.
In another bowl, combine the sour cream, lemon juice, lime juice, cumin and seasoned salt. Pour over cucumber mixture and toss gently to coat. Serve immediately with chips.
Not being a fan of sour cream, maybe sub in mayo? some sort of mustard (not yellow).

Fresh Pickled Cucumber Salad
Ingredients:
7-cups unpeeled pickling cucumbers sliced thin (about 7 large dills)1-cup sliced onions
1-cup sliced bell peppers
1-tbsp salt
1 cup white vinegar
2-cups sugar ( I would substitute with stevia for lower carb)
1-tsp celery seed
1-tsp mustard seed
optional, increase by 2 or 3 more dills, leave out peppers
Directions
Mix cucumbers, onions, peppers and salt; set a side
Put vinegar, sugar, celery seed and mustard seed in a pot and bring to a boil

Pour mixture over cucumbers
Put in jars and store in refrigerator

Grandma's Cucumber Salad

Cucumber Salad |
3 Med. Cucumbers Peeled and Sliced 1/4"
1 Med. Onion sliced and separate into rings
3 Med. tomatoes cut into wedges
1/2 C. Vinegar
1/4 C. Sugar
1 C. water
1/4 C. olive oil
2 tsp.salt
1 tsp. ground pepper
Combine all in a large bowl, toss making sure everything is coated well.
Refrigerate for at least 2 hrs before serving.

Quick Pickles
3 cups white vinegar
1 1/2 cups sugar
2 teaspoons coarse salt
1/2 teaspoon mustard seed
1/2 teaspoon celery seed
2 to 4 small red chiles (optional)
1/8 teaspoon ground turmeric
1 1/2 cups fresh dill fronds (about 1 bunch)
1 1/2 cups sugar

1/2 teaspoon celery seed

1 1/2 cups fresh dill fronds (about 1 bunch)
Preparation:
- In a medium saucepan, combine white vinegar, sugar, salt, mustard seed, celery seed, red chiles (optional), and ground turmeric.
- Bring to a boil, stirring to dissolve sugar.
- Arrange prepared vegetables and dill fronds in one or more jars.
- Pour hot brine into jar to completely cover vegetables and seal jar.
- Refrigerate until cool, about 2 hours (or up to 1 week).
