Mozzarella Stuffed Meatloaf


Ingredients

 
    1 pound ground beef (85%)
    1 cup bread crumbs
    1 tsp dried basil
    1 tsp dried oregano
    1 tsp dried parsley
    1 tsp salt
    ½ tsp black pepper
    ½ cup milk
    2 TB worcestershire sauce
    8 oz fresh mozzarella, sliced
    1 cup ketchup
    ¼ cup brown sugar, tightly packed
    1 TB worcestershire sauce
    1 TB red wine vinegar
    2 cloves garlic, crushed
    ? tsp salt
    pinch cayenne pepper 
 

 Instructions 

 
    Preheat oven to 350 degrees. Lightly grease a glass baking pan (9x13) with nonstick cooking spray.
    In a large mixing bowl combine ground beef, bread crumbs, basil, oregano, parsley, salt, 
        pepper, milk, and worcestershire sauce. Knead until combined.
    Divide meat in half. Shape one half of the meat into the bottom half of the loaf and 
        place in prepared pan. 
    Place mozzarella slices down the center, leaving ½ inch around the ends and sides. 
    Shape remaining half of meat as the top half of the loaf, sealing the edges. This is a free-form loaf so
        it doesn't need to be perfect.
    In a small mixing bowl whisk together ketchup, brown sugar, worcestershire sauce, red wine 
       vinegar, garlic, salt, and cayenne pepper. 
    Pour half of this mixture over the meatloaf, reserving the remaining half for later.
    Bake in the preheated oven for 45 minutes.
    After 45 minutes, remove from oven and pour the remaining sauce over the loaf.
    Increase temperature to 400 degrees and bake for an additional 15 minutes.
    Let rest 5 to 10 minutes before serving.

Cheez-it Meatloaf



Ingredients

2 lbs ground beef
1 cups Cheez-It crackers, crushed
1 packet dry onion soup mix
2 egg
1/4 cup sharp shredded cheddar cheese 
ketchup
 


Directions

Pre-heat the oven to 350 Degrees F.
Crush Cheez-It Crackers.
Beat the egg.
Mix All ingredients.
Form into a loaf shape.
Place in a greased bread pan.
Cook for 40 minutes.
Coat the top with ketchup.
And place back in oven for 10 Minutes.

Cracker Barrel Meatloaf

Ingredients

2 eggs
2/3 cup milk
32 Ritz crackers, crushed
1/2 cup chopped onion
4 ounces shredded sharp cheddar cheese
1 teaspoon salt
1/4 teaspoon pepper
1 1/2 lbs ground beef
1/2 cup ketchup
1/2 cup brown sugar
1 teaspoon mustard


Directions

Preheat oven to 350.
Beat eggs. Add milk and crackers. Stir in onion and cheese. Add ground beef. Mix well. Shape into a loaf.
Bake at 350 for 45 minutes.
Combine ketchup, brown sugar and mustard to make topping.
Spoon half of the topping over the meatloaf after 30 mins of baking.
Return loaf to oven for 10 more mins of baking.
Spoon the rest of the topping over meatloaf, return to oven and bake for 5-10 minutes more.

Crock pot Meatloaf


Ingredients:


(can use any meatloaf recipe, here is one)

2.5 pounds of ground turkey (or beef, if you prefer)
1 egg
3/4  cup smashed cornflakes (or bread crumbs, but I prefer corn flakes)
1 envelope of Lipton onion soup mix
2-3 Tbsp Worcestershire sauce
salt, pepper, paprika, garlic salt, Italian seasoning to taste.

Directions:


Mix the ingredients well and form a “loaf” in the bottom of your crock pot.
Then, wash 5-6 potatoes, prick them with a knife or fork, and wrap them in foil.
Place them around the meatloaf.   place around outside edge of pot, with meatloaf formed in middle.
Cook for 8-10 hours on low.

Parmesan Meatloaf

(Low Carb)

Ingredients:

2 lbs Ground Beef
1/2 cup Parmesan Cheese
1/4 cup Dijon Mustard
1/2 cup Ketchup
2 tbs Majoram 
1 tbs dried basil 
1 tbs dried parsley 
1 tbs oregano 
1 tbs thyme 
1 teaspoon salt 
2 teaspoon pepper 
1/2 cup mozzarella cheese 
4 cloves garlic, chopped 
1/4 cup green bell pepper 
1 small onion, very finely chopped 
1/2 cup spaghetti sauce of your choice 
1 tbs olive oil 
1 large egg, beaten (optional) 

Directions:

In a large bowl, combine the ground beef, egg, seasonings, and dressings in a bowl. 
Put mixed beef, into a sprayed loaf pan. 
Top the meatloaf with pasta sauce and mozzarella cheese. 
Place filled loaf pan on bottom rack of oven and bake in the preheated oven at 375 degrees for 45 minutes - 1 hour. 
Remove the meatloaf from the oven and allow to rest for 5-10 minutes before serving/slicing. 
Garnish with parsley if desired
