Copycat Spaghettios

Ingredients

  • 450 grams O-shaped pasta
  • 16 ounces tomato sauce
  • 4 tablespoons tomato paste
  • 1/4 teaspoon garlic powder
  • 1/2 teaspoon paprika
  • 1/2 teaspoon onion powder
  • 1/4 teaspoon dried thyme
  • 1/2 teaspoon salt (plus salt for pasta water)
  • 1 tablespoon honey
  • 6 tablespoons milk
  • 2 tablespoons salted butter
  • 1 cup shredded cheddar cheese, optional

Instructions

  • Start by cooking the pasta according to the package instructions.
  • While the pasta is cooking, add all of the other ingredients (except the shredded cheese) to a sauce pan.
  • Over medium heat, whisk the ingredients together and cook until the butter is melted and the sauce is simmering. (If you are adding the shredded cheese, do so now. Use a rubber spatula to fold it into the sauce until melted and fully incorporated.) Continue to simmer, stirring frequently.
  • Drain the cooked pasta well. Transfer it to the saucepan with the sauce. Stir the pasta into the sauce and evenly coated. Turn off the heat. Plate the pasta and enjoy.

Grilled Cheese Roll ups



Ingredients
8 slices soft bread
1-1/2 cups shredded cheddar cheese
2 tablespoons butter

Directions
Step 1: Prepare the bread
Take a single slice of the white bread and cut off the crusts. Then, take a rolling pin and flatten the bread into a thin piece. You want to avoid using a firm bread, like sourdough, because it will crack when you try to roll it. Using thick slices also keeps the bread from tearing.

Step 2: Add cheese and butter
Next, take your thin slice of white bread and grab the cheese. You’re more than welcome to use slices of cheese rather than shredded, but shredded tends to work better when rolling. Once you’ve spread a thin layer of cheese all over the bread, roll it up and brush melted butter on the edge to secure it shut.

Brush melted butter completely around the roll-up as well. You don’t want to forget that nice, golden outside.

Step 3: Cook the grilled cheese roll-ups
Place the roll-ups in a nonstick pan over low-medium heat. Rotate occasionally. Cook until the center melts and the outside becomes a golden brown (and crispy).

Baked Sausage, Potatoes and Sauerkraut



Ingredients
Makes: 8 Servings
2 Tablespoons butter
1 large cooking onion (chopped)
2 (796ml) jars sauerkraut (we used Kuhne brand which is a German product) you can use your favorite *each can is 796mLs
* NOTE - one jar would be enough, but we love sauerkraut and so used 2 jars.
8-10 medium to large russet potatoes (washed, peeled and cut into 2-3 inch cubes)
6-8 precooked turkey sausages (we used a brand from a local butcher, you can choose your favorite sausage
sour cream (optional but tastes great served with the meal)

Directions

1. Preheat oven to 375 degrees F.
2. Have ready a 9X13 baking dish or if you have a big Dutch oven you can use that.
3. In a large skillet, melt the butter on low heat, add the onions and cook for a few minutes over medium heat, stirring, until the onions are transparent and soft.
4. Add the jars of sauerkraut and stir into the onions.
5. Place the chopped potato pieces into a 9x13 inch baking dish.
6. Spread the sauerkraut onion mixture over the potatoes.
7. Chop the sausage into 2 inch chunks and arrange on top.
8. Cover the pan with aluminum foil and bake for one hour.
9. You can precook this meal a day ahead as it gets even tastier when it sits and refrigerate.
10. Reheat at 425 degrees F for about 30 minutes or until heated throughout.

Peanut Butter Cookies



Ingredients :
1/2 cup butter
1/2 cup peanut butter
1/2 cup sugar
1/2 cup brown sugar
1 egg
1/2 teaspoon vanilla
1 1/4 cups sifted flour
3/4 teaspoon baking soda
1/4 teaspoon salt

Directions :

Preheat oven to 375?. Mix first six ingredients.
Add the rest of the ingredients. Mix well.
Roll into balls and press down with a fork dipped in sugar or flour.
Bake for 10-12 minutes on ungreased cookie sheet.

Belgian Beef Stew


Not sure the beer couldn't be a red wine. 

Ingredients

  • 2 lbs chuck roast, cut into 2-inch pieces
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 2 T all-purpose flour
  • 1 T olive oil
  • 1 T butter, unsalted
  • 1 1/2 C pearl onions, peeled
  • 2 lg carrots, peeled and cut into 1/2-inch slices
  • 4 C low sodium beef broth, divided
  • 1 T light brown sugar, packed
  • 1 T tomato paste
  • 1 (2.6 oz) package beef demi-glace
  • 1 1/2 C Oud Bruin-style beer
  • 2 C small red potatoes, cut in half
  • 8 oz button mushrooms, cut in half
  • 2 tsp fresh thyme, chopped
  • 1 T flat leaf parsley, minced
  • 2 tsp cider vinegar, optional

Directions

Season beef with salt and pepper and dust with flour.
Heat olive oil in a Dutch oven or a large, heavy saucepan over medium high heat.
Add beef in batches; sear on all sides.
Transfer to a plate and set aside.
Add butter and reduce heat to medium.
Add onions and carrots and sauté until lightly golden, about 6 minutes.
Whisk together 1 C of beef broth with brown sugar, tomato paste and demi-glace.
Add to vegetables, stirring to combine.
Add beer and bring to a boil over high heat.
Reduce heat and simmer for 20 minutes.
Return beef to pan along with potatoes, mushrooms, thyme and remaining beef broth.
Cover and simmer for 1 1/2 to 2 hours, or until beef is very tender.
Before serving, stir in parsley and cider vinegar to taste.

Bacon Cheeseburger Pasta


AKA Hamburger Helper
This can be done with a Hamburger Helper box.  Copied this recipe here to help punch up the contents of the box.

Ingredients:


10 ounces of uncooked elbow macaroni.
8 slices of diced bacon.
1 1/2 lbs of ground beef.
2 sliced onions.
2 tbsps of chili powder.
1 tsp of salt.
1 tsp of pepper.
1 (14 ounce) can of chopped tomatoes.
1/2 cup of tomato sauce.
1/2 stick of salted butter.
1 cup of shredded cheddar cheese.
1/2 cup of freshly grated parmesan cheese.

Directions:


Cook the macaroni according to the package instructions and drain it.

Replace the pasta in the pot and mix in 1/2 stick of the butter.

Cook the bacon in a large skillet until crispy then mix in the ground
beef and onions and cook.

Mix in the chili powder, salt and pepper and cook for 5 more minutes.

Mix in the tomato sauce and chopped tomatoes until well combined
then stir in the warm macaroni with the shredded cheese and
parmesan cheese.

Cook the mixture over low heat
